The Mills Are Hiring | Job | Chef de Partie Tuesday, July 15, 2014 The Mills Inn is situated 45 minutes from Cork and 20 minutes from Killarney in the Gaeltacht area of Ballyvourney. It has accommodation as well as a thriving pub and restaurant business. The Mills Inn is looking to recruit a permanent and full time Chef de Partie The candidate will have a minimum of 2 years experience at this level preferably in 4 * establishments. The successful candidate will be supported by an experienced Head Chef and management team. General Duties and Responsibilities: The production of food to the standards laid down by the Sous Chef and/or the Head Chef. Work the Sous Chef and Head Chef regarding events and functions. To be aware of current food trends with regard to presentation and style and help with new menu ideas and design. Understand the menus and food quality expectations. Ensure all food is prepared in a timely fashion. Ensure all food leaving the kitchen is prepared to the required standard and the presentation is of the highest standard. Work to margins set regarding wastage. Be aware of food margins and costings. Observe portion controls. Observe all food hygiene standards and practices. Ensure HACCP compliance within the kitchen and all Food & Beverage outlets. Ensure that stock is rotated and controlled within the specific section of the kitchen. On a daily basis check all equipment that your section uses to ensure compliance with health and safety standards. Any faults report immediately to maintenance. Manage staff under your supervision to the standards laid down by the company. Managing the development and supervision of the Commis Chefs on the section, ensuring they are fully trained and understand their duties. The ideal candidate for this position: Must have previous experience in a similar position, ideally in 4* establishments. Must have a passion for food and want to impress with their abilities. Must have a keen attention to details. Must be able to work in a fast paced environment. Must have a good command of the English Language. Must have excellent self-presentation. Be HACCP trained. Should be professionally trained and qualified.
